Fresh Mint Iced Tea

Fresh mint herb + water & ice = my favorite summer refresher! And it's ready in minutes, yet it tastes so lovely and refreshing, you won't believe how simple it is to prepare.

There are many types of mint herb, but the most commonly used for tea are sweet mint, peppermint, and spearmint. In fact, today I mixed two types, sweet mint and peppermint.

I wanted to use the rest of my sweet mint (above) before I replace it, as some of the stems have a blight. But I didn't have enough, so I added in some peppermint (below). Your tea will taste delicious no matter what mint you have on hand to use.

I often show pictures of my tiered herb garden on wheels, so I thought I would place a link for it here (to the left.) At first, it felt expensive, but I can now say from experience that it's totally worth it!
This planter has lasted years and even a night in a moving truck, herbs and all. But in case you don't want to risk the truck, haha, it's simple to assemble or dissemble if needed.
The best part is being able to wheel around the planter to face the sun, or not, as well as easily moving the herbs out of the blazing heat or aggressive rain. This is especially helpful in our extreme Florida weather.

Also, in case you are interested, here is the link to a set of metal garden labels that comes with a permanent marker. (As of the time of this post, the exact set I bought isn't available in black anymore, but the set shown to the right appears to be identical.)
I can tell you that the set I have has lasted a rainy season already and that is saying something! I can't believe a white marker shows up that well, not to mention holds up in the weather, but it does. This set showing available on Amazon comes with 30 marker stakes, which is probably plenty for most herb gardens and may even be enough for a vegetable garden.
Okay, enough about gardening for now, let's get started on our tea. After all, it only takes minutes, so we don't want to blink and miss it!
FRESH MINT TEA
Prep Time: 8-10 mins / Serves 2
RECIPE
Handful of fresh mint herb
2 1/4 cups water (some will evaporate)
DIRECTIONS
1. Bring the water to a boil.
2. While water is heating, rinse and dry the mint, trim the stalks, and crush the leaves in your hand.
3. Once water is boiling, add the mint, and reduce heat to a simmer for about 5 minutes or until you see some nice color.
4. Allow tea to cool so as not to instantly melt ice, and strain the leaves.
5. Pour tea over ice and serve immediately, or refrigerate for later.
STEP-BY-STEP DIRECTIONS WITH PHOTOS

1. Bring the water to a boil.

2. While water is heating, rinse and dry the mint.

Trim the stalks, and crush the leaves in your hand.

3. Once water is boiling, add the mint.

Reduce heat to a simmer for about 5 minutes or until you see some nice color.

4. Allow tea to cool so as not to instantly melt ice, and strain the leaves.
