Creamy Pesto Pasta

It's my mom's birthday weekend! HAPPY BIRTHDAY, MOM! My mom is the one who instilled in me a love of land, gardening, animals, natural living, you name it. I remember she always said her dream was that we would all go outside and eat our meals right out of the garden. We would always tease her that she wanted us to graze like cattle in the back yard, haha! But now, I understand what she meant. In fact, one of my best parenting moments so far was the first time my baby teetered out to our potted tomato plant and started plucking cherry tomatoes and popping them in her mouth; she devoured them raw like candy. In that moment, I felt everything had come full circle.
Speaking of gardens, earlier this summer, I shared a recipe for pesto. At that time, I promised I would share my pasta recipe that incorporates my homemade pesto and so as promised, here it is. Scroll down to find my recipe for simple but flavorful pesto, lemon and tomato angel hair pasta!

This light, lemony pesto pasta works as a gorgeous side dish, serves a lovely bed for a piece of roasted white fish, or stands alone as a simple dinner. And it's just in time for the end of summer!
Of course, the concept of seasons is mostly theoretical here in Florida. Down in South Florida there are two seasons: Horrifically Hot and Tolerably Warm. Having moved to Central Florida in May, we haven't wintered here yet, but I hear that the two seasons here are similar: Horrifically Hot and Slightly Cooler. Considering that today was around 100 degrees with the heat index, "autumn" doesn't feel like a real thing yet, but I sure am looking forward to the occasional cooler temps we were promised!
In the meanwhile, let's enjoy a sunny and herbaceous classic: pesto with cream over angel hair with a handful of garden-fresh veggies and herbs! Here is one of my new favorite recipes, easy breezy Creamy Pesto Pasta!
CREAMY PESTO PASTA
Prep Time: 20 mins / Serves 4
RECIPE
8 oz angel hair pasta
1 tsp salt
1/4 cup homemade pesto
1 cup cream
1/2 cup halved cherry tomatoes
Shaved parmesan cheese
Wedges of lemon
Fresh baby basil leaves to garnish
DIRECTIONS
1. Bring a pot of water to a boil oil; add the angel hair pasta and salt. Cook 4 - 5 minutes until al dente.
2. While pasta is cooking, heat a sauté pan over medium high heat and stir together the pesto and cream until just hot.
3. Drain the cooked pasta and add it to the sauté pan with the pesto cream sauce.
4. Add the cherry tomatoes and toss in the pan quickly. Avoid overcooking as you don't want the pasta to get mushy.
5. Serve by garnishing with shaved parmesan cheese, wedges of lemon, and fresh baby basil leaves. Everyone can squeeze their own fresh lemon juice to taste.
STEP-BY-STEP DIRECTIONS WITH PHOTOS
